Ingredients
4 large russet potatoes, peeled and shredded
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
4 tablespoons unsalted butter, divided
1 cup shredded cheddar cheese
4 slices bacon, cooked and crumbled
2 green onions, thinly sliced
Sour cream, for serving
Instructions
Place shredded potatoes in a clean kitchen towel and wring out excess moisture. Transfer to a bowl and toss with salt, pepper, and garlic powder.
Melt 2 tablespoons butter in a large nonstick skillet over medium-high heat. Add potato mixture and press into an even layer. Cook until golden brown on the bottom, about 8 minutes.
Place a plate over the skillet and carefully invert the hash brown onto the plate. Add remaining 2 tablespoons butter to skillet and slide hash brown back in, cooked side up. Cook until golden brown on the other side, about 8 minutes.
Sprinkle cheese and bacon over the top. Cover skillet and cook until cheese melts, about 2 minutes.
Slide onto a serving platter, top with green onions and sour cream. Cut into wedges and serve.

To save time, use frozen shredded hash browns, thawed and patted dry.
