Ingredients
4 large russet potatoes (about 10 oz each)
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 cup shredded cheddar cheese
1/2 cup sour cream
4 slices bacon, cooked and crumbled
2 tablespoons unsalted butter
2 tablespoons chopped fresh chives
Salt and freshly ground black pepper to taste
Instructions
Preheat oven to 425°F (220°C). Scrub potatoes and pat dry. Pierce each potato several times with a fork.
Rub potatoes with olive oil and sprinkle with kosher salt. Place directly on oven rack and bake for 50-60 minutes, until tender when pierced with a fork.
Remove potatoes from oven and let cool slightly. Cut a slit lengthwise in each potato and gently squeeze ends to open.
Fluff the inside of each potato with a fork. Add 1/2 tablespoon butter to each potato and season with salt and pepper.
Top each potato with shredded cheddar cheese, crumbled bacon, a dollop of sour cream, and a sprinkle of chives. Serve immediately.
Tips
For extra crispiness, bake potatoes on a wire rack set inside a baking sheet.
Leftover loaded potatoes can be reheated in a 350°F oven for 10 minutes.
Customize with toppings like broccoli, chili, or jalapeños.
