Ingredients
8 oz dried lo mein egg noodles
2 tbsp vegetable oil
2 cloves garlic, minced
1 tsp grated fresh ginger
1 cup sliced shiitake mushrooms
1 cup shredded carrots
1 cup snow peas, trimmed
3 green onions, sliced
3 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1 tsp sugar
1/2 tsp sesame oil
1/4 cup chicken or vegetable broth
Instructions
Cook noodles according to package directions until al dente. Drain and rinse under cold water; set aside.
In a small bowl, whisk together soy sauce, dark soy sauce, oyster sauce, sugar, sesame oil, and broth. Set aside.
Heat vegetable oil in a wok or large skillet over high heat. Add garlic and ginger; stir-fry for 30 seconds.
Add mushrooms and carrots; stir-fry for 2 minutes. Add snow peas and green onions; stir-fry for 1 minute more.
Add the cooked noodles and the sauce mixture. Toss everything together and cook for 1-2 minutes until noodles are heated through and coated with sauce.
Serve immediately, garnished with additional sliced green onions if desired.
Tips
For extra protein, add cooked chicken, shrimp, or tofu.
Do not overcook the noodles; they should be slightly chewy.
If the sauce seems too thick, add a splash of broth or water.
