Ingredients
2 tablespoons olive oil
1 large onion, roughly chopped
2 carrots, peeled and roughly chopped
2 celery stalks, roughly chopped
2 cloves garlic, smashed
1 leek, white and light green parts only, sliced
1 bay leaf
4 sprigs fresh thyme
6 cups water
1 teaspoon salt
1/2 teaspoon black peppercorns
Instructions
Heat olive oil in a large pot over medium heat. Add onion, carrots, celery, garlic, and leek. Cook, stirring occasionally, for 5 minutes until vegetables begin to soften.
Add bay leaf, thyme, water, salt, and peppercorns. Bring to a boil.
Reduce heat to low, cover partially, and simmer for 30 minutes.
Remove from heat and let cool slightly. Strain through a fine-mesh sieve into a large bowl, pressing on solids to extract liquid. Discard solids.
Taste and adjust seasoning if needed. Use immediately or refrigerate for up to 5 days.

For a clearer broth, avoid stirring while simmering.
