Ingredients
1 tablespoon vegetable oil
1 pound ground chicken or turkey
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
1/2 cup water chestnuts, drained and diced
1/4 cup hoisin sauce
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
1/2 cup shredded carrots
1/4 cup chopped green onions
1 head butter lettuce or iceberg lettuce, leaves separated
Instructions
Heat vegetable oil in a large skillet over medium-high heat. Add ground chicken and cook, breaking it apart, until browned and cooked through, about 5-7 minutes.
Add garlic and ginger; cook for 1 minute until fragrant.
Stir in water chestnuts, hoisin sauce, soy sauce, rice vinegar, sesame oil, and red pepper flakes if using. Cook for 2-3 minutes until sauce thickens slightly.
Remove from heat and stir in shredded carrots and green onions.
To serve, spoon the filling into lettuce leaves. Wrap and enjoy.
Tips
For a vegetarian version, substitute ground chicken with crumbled firm tofu or chopped mushrooms.
Serve with additional hoisin sauce or sriracha for dipping.
