Ingredients
1.5 lbs boneless skinless chicken breasts
3 tbsp olive oil
2 tbsp fresh lemon juice
2 cloves garlic, minced
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp salt
1/4 tsp black pepper
6 cups mixed salad greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/4 red onion, thinly sliced
1/4 cup crumbled feta cheese
Lemon vinaigrette (1/4 cup olive oil, 2 tbsp lemon juice, 1 tsp Dijon mustard, salt and pepper to taste)
Instructions
1. In a bowl, whisk together 3 tbsp olive oil, 2 tbsp lemon juice, garlic, oregano, thyme, salt, and pepper. Add chicken breasts, turning to coat. Marinate for 15 minutes.
2. Preheat grill to medium-high heat. Grill chicken for 5-7 minutes per side, until internal temperature reaches 165°F. Let rest 5 minutes, then slice.
3. In a large bowl, combine salad greens, tomatoes, cucumber, and red onion. Toss with lemon vinaigrette.
4. Divide salad among plates, top with sliced chicken and feta cheese. Serve immediately.
