Ingredients
1 store-bought or homemade pound cake (about 10 oz), cut into 1-inch cubes
1/2 cup sherry or fruit juice (e.g., orange juice)
3 cups mixed fresh fruit (e.g., strawberries, raspberries, blueberries)
1/4 cup granulated sugar (for fruit, optional)
1 (3.4 oz) package instant vanilla pudding mix
2 cups cold whole milk
2 cups heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
1/4 cup sliced almonds, toasted (optional)
Instructions
Place cake cubes in a large bowl and drizzle with sherry or juice; toss gently. Set aside.
If using, toss fruit with sugar and let macerate for 10 minutes.
In a medium bowl, whisk pudding mix and milk until thickened, about 2 minutes. Set aside.
In a separate bowl, beat heavy cream, powdered sugar, and vanilla until stiff peaks form. Fold half of the whipped cream into the pudding until smooth.
In a trifle dish or large glass bowl, layer half of the cake cubes, then half of the fruit, then half of the pudding mixture. Repeat layers.
Top with remaining whipped cream. Sprinkle with toasted almonds if desired. Refrigerate at least 2 hours before serving.
Tips
For best flavor, use ripe, seasonal fruit.
Trifle can be made a day ahead; cover and refrigerate.
Substitute ladyfingers for pound cake if preferred.
