Ingredients
2 cups all-purpose flour
2 cups granulated sugar
3/4 cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 large eggs
1 cup buttermilk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup hot coffee
12 ounces semisweet chocolate, finely chopped
1 1/2 cups heavy cream
2 tablespoons unsalted butter, softened
Instructions
Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
Add eggs, buttermilk, oil, and vanilla; beat with an electric mixer on medium speed for 2 minutes. Stir in hot coffee (batter will be thin).
Divide batter evenly between prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in center comes out clean. Cool in pans for 10 minutes, then turn out onto wire racks to cool completely.
For ganache: Place chopped chocolate in a heatproof bowl. Heat heavy cream in a small saucepan until just simmering. Pour over chocolate; let stand 5 minutes, then stir until smooth. Stir in butter until melted. Let cool until thickened but spreadable, about 30 minutes.
Place one cake layer on a serving plate. Spread about 1 cup ganache over top. Place second layer on top. Frost top and sides with remaining ganache. Let set at room temperature before serving.
Tips
For a neater slice, chill the cake for 30 minutes before cutting.
Store covered at room temperature for up to 3 days.
Add a pinch of sea salt to ganache for a salted chocolate version.
