Ingredients
12 lasagna noodles
1 tablespoon olive oil
1 onion, chopped
3 cloves garlic, minced
1 pound ground beef
1 can (28 ounces) crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
2 cups ricotta cheese
1 egg
1/2 cup grated Parmesan cheese
3 cups shredded mozzarella cheese
Instructions
Preheat oven to 375°F. Cook lasagna noodles according to package directions; drain and set aside.
In a large skillet, heat olive oil over medium heat. Add onion and garlic; cook until softened. Add ground beef and cook until browned. Drain fat.
Stir in crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Simmer for 15 minutes.
In a bowl, combine ricotta cheese, egg, and Parmesan cheese.
Spread a thin layer of meat sauce in a 9x13-inch baking dish. Layer 4 noodles, then 1/3 of the ricotta mixture, 1/3 of the remaining meat sauce, and 1/3 of the mozzarella. Repeat layers twice.
Cover with foil and bake for 25 minutes. Remove foil and bake for 25 more minutes until bubbly and golden.
Let stand for 10 minutes before serving.
Tips
For a vegetarian version, substitute ground beef with sautéed mushrooms and spinach.
Let the lasagna rest after baking to set the layers for cleaner slices.
Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
