  4. Lay out a large piece of parchment paper (about 60 cm long) on a baking tray. Place bay leaves, onion slices, and potatoes in the center. Arrange lamb on top. Pour any remaining marinade and broth over the lamb.
  5. Fold the parchment paper over the lamb and seal tightly by folding the edges. Ensure no steam can escape.
  6. Bake for 2 hours, or until lamb is very tender and falling off the bone.
  7. Carefully open the parchment (watch for steam) and serve hot.
