Ingredients
- 1 kg lamb shoulder, cut into 2-inch cubes
- 3 tablespoons vegetable oil
- 2 large onions, finely chopped
- 4 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric
- 1 teaspoon chili powder
- 1 teaspoon garam masala
- 400g can chopped tomatoes
- 1 cup plain yogurt
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Heat oil in a large pot over medium-high heat. Brown lamb in batches, then set aside.
- Reduce heat to medium. Add onions and cook until golden, about 8 minutes.
- Add garlic and ginger, cook for 1 minute.
- Stir in cumin, coriander, turmeric, chili powder, and garam masala. Cook for 1 minute.
- Return lamb to pot. Add tomatoes and yogurt. Stir well.
- Bring to a simmer, then reduce heat to low. Cover and cook for 45-60 minutes until lamb is tender.
- Season with salt. Garnish with cilantro and serve with rice or naan.

- For extra richness, use bone-in lamb.
- Adjust chili powder to taste.
- Store leftovers in refrigerator for up to 3 days.
