Ingredients
8 lamb rib chops (about 1 1/2 lbs total)
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon butter (optional)
Instructions
Pat lamb chops dry with paper towels. Season both sides with salt and pepper.
In a small bowl, mix olive oil, minced garlic, and chopped rosemary. Rub mixture all over lamb chops. Let sit at room temperature for 15 minutes.
Heat a large skillet over medium-high heat. Add lamb chops in a single layer (work in batches if needed). Cook for 3-4 minutes per side for medium-rare, or until desired doneness.
Optional: In the last minute of cooking, add butter to the pan and baste the chops for extra richness.
