Ingredients
1 lb ground lamb
1/2 cup finely chopped onion
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup chopped fresh parsley
1 large egg, lightly beaten
4 hamburger buns, split and toasted
4 slices feta cheese (optional)
Lettuce, tomato slices, and tzatziki sauce for serving
Instructions
In a large bowl, combine ground lamb, onion, garlic, cumin, coriander, paprika, salt, pepper, parsley, and egg. Mix gently until just combined; do not overwork.
Divide mixture into 4 equal portions and shape into patties about 3/4 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.
Preheat grill or skillet over medium-high heat. Lightly oil the grate or pan.
Cook patties for 4-5 minutes per side for medium doneness (internal temperature 160°F). If adding feta, place a slice on each patty during the last minute of cooking and cover to melt.
Toast buns on the grill or in a skillet until lightly golden.
Assemble burgers: place patty on bun bottom, top with lettuce, tomato, and tzatziki sauce. Cover with bun top and serve immediately.
Tips
For best results, use ground lamb with some fat content (80/20) for juiciness.
Tzatziki sauce can be store-bought or homemade: combine Greek yogurt, grated cucumber, garlic, lemon juice, and dill.
