  2. In a small bowl, mix remaining 1 tbsp soy sauce, doubanjiang, rice vinegar, sugar, and chicken broth. Set sauce aside.
  3. Heat 1 tbsp oil in a wok or large skillet over high heat. Add peanuts and stir-fry 1 minute until fragrant. Remove and set aside.
  4. Add 1 tbsp oil to the wok. Stir-fry chicken in a single layer until golden and cooked through, about 4 minutes. Remove and set aside.
  5. Add remaining 1 tbsp oil. Stir-fry bell peppers and zucchini for 2 minutes until crisp-tender. Add garlic and ginger; stir 30 seconds.
  6. Return chicken and peanuts to the wok. Pour in sauce and stir-fry 1-2 minutes until sauce thickens and coats everything.
  7. Remove from heat. Stir in green onions and sesame oil. Serve immediately over steamed rice.
