Kue putu is a traditional Indonesian steamed rice cake with a soft, fluffy texture and a sweet coconut filling. This recipe recreates the classic street food favorite at home.

Ingredients
1 cup rice flour
1/2 cup water
1/4 teaspoon salt
1/2 cup grated fresh coconut (or desiccated, rehydrated)
1/4 cup palm sugar, finely chopped
2 pandan leaves (or 1/2 teaspoon pandan extract)
Banana leaves for lining steamer (optional)
Instructions
Combine rice flour, water, and salt in a bowl. Mix until crumbly and moist. Rub between palms to ensure even moisture. Set aside for 10 minutes.
Prepare the filling: mix grated coconut with chopped palm sugar. Set aside.
Grease putu molds or small ramekins. Fill each halfway with rice flour mixture, add a teaspoon of coconut-palm sugar filling, then top with more rice flour mixture. Press lightly.
Place a piece of pandan leaf on top of each mold (or add pandan extract to the flour mixture).
Steam in a preheated steamer over high heat for 15-20 minutes, until firm and cooked through.
Remove from steamer, let cool slightly, then unmold. Serve warm.
Tips
If using desiccated coconut, soak in a little warm water for 10 minutes and drain before using.
For a greener color, add a few drops of pandan extract or juice from pandan leaves to the rice flour mixture.
Serve with extra grated coconut and a drizzle of palm sugar syrup if desired.
