Ingredients
6 large egg whites, at room temperature
1 1/2 cups (300g) superfine sugar
2 teaspoons cornstarch
1 teaspoon white vinegar
1 teaspoon vanilla extract
2 cups (480ml) heavy cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
4 ripe kiwifruit, peeled and sliced
1 tablespoon fresh mint leaves (optional)
Instructions
Preheat oven to 250°F (120°C). Line a baking sheet with parchment paper and draw a 9-inch (23cm) circle as a guide.
In a large clean bowl, beat egg whites with an electric mixer on medium speed until soft peaks form. Gradually add superfine sugar, 1 tablespoon at a time, beating well after each addition until stiff, glossy peaks form.
Sprinkle cornstarch, vinegar, and 1 teaspoon vanilla extract over the meringue; fold gently with a spatula until just combined.
Spoon meringue onto the parchment circle, shaping into a round with slightly higher edges. Bake for 60 minutes, then turn off oven and let meringue cool completely inside with door slightly ajar (about 1 hour).
In a chilled bowl, beat heavy cream, powdered sugar, and 1 teaspoon vanilla extract until soft peaks form. Spread whipped cream over cooled meringue.
Arrange kiwifruit slices on top of cream. Garnish with mint leaves if desired. Serve immediately.
Tips
Ensure no yolk gets into the egg whites for proper meringue volume.
For a drier meringue, leave in the oven after baking with door closed until completely cool.
Assemble just before serving to keep the meringue crisp.
