  1. Rinse the rice and mung beans together in a fine-mesh strainer until the water runs clear. Soak in water for 20 minutes, then drain.
  2. In a large pot, heat ghee over medium heat. Add cumin seeds and mustard seeds; cook until they pop, about 30 seconds.
  3. Add turmeric, coriander, ginger, and asafoetida. Stir for 10 seconds until fragrant.
  4. Add the drained rice and mung beans, water, and salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 35-40 minutes, stirring occasionally, until the beans and rice are soft and the mixture has a porridge-like consistency. Add more water if needed.
  6. Remove from heat. Stir in lemon juice if using. Garnish with cilantro and serve warm.
