Ingredients
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tomatoes, pureed
- 1 teaspoon cumin seeds
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon salt
- 2 cans (15 oz each) kidney beans, drained and rinsed
- 1/2 cup water
- 2 tablespoons fresh cilantro, chopped
Instructions
- Heat oil in a large pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion and sauté until golden brown, about 5-7 minutes.
- Add garlic and ginger, cook for 1 minute until fragrant.
- Add tomato puree, coriander, turmeric, red chili powder, garam masala, and salt. Cook for 5 minutes, stirring occasionally, until the oil separates.
- Add kidney beans and water. Stir well, bring to a simmer, then cover and cook for 10 minutes, stirring occasionally.
- Uncover and cook for another 5 minutes to thicken the gravy. Adjust salt and spices to taste.
- Garnish with fresh cilantro and serve hot with rice or naan.
