Ingredients
1/2 cup mayonnaise
1/4 cup buttermilk
2 tablespoons apple cider vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon onion powder
1/4 teaspoon dry mustard
1/2 head green cabbage, finely shredded (about 4 cups)
1 large carrot, peeled and finely shredded (about 1 cup)
Instructions
In a small bowl, whisk together mayonnaise, buttermilk, apple cider vinegar, sugar, salt, pepper, onion powder, and dry mustard until smooth and well combined.
In a large bowl, combine shredded cabbage and carrot.
Pour the dressing over the vegetables and toss until evenly coated.
Cover and refrigerate for at least 2 hours before serving to allow flavors to meld. Stir before serving.
Tips
For best results, use a food processor or mandoline to get very fine shreds of cabbage and carrot.
The coleslaw can be made a day ahead; it keeps well in the refrigerator for up to 3 days.
If you prefer a tangier slaw, add an extra tablespoon of apple cider vinegar.
