Ingredients
- 1 cup whole milk
- 2 teaspoons powdered gelatin (about 1 packet)
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups plain kefir (full-fat preferred)
Instructions
- In a small bowl, sprinkle gelatin over 1/4 cup of the milk. Let stand for 5 minutes to bloom.
- In a small saucepan, combine remaining 3/4 cup milk and sugar. Heat over medium, stirring, until sugar dissolves and mixture is hot but not boiling.
- Remove from heat. Add bloomed gelatin and stir until completely dissolved. Stir in vanilla extract.
- Let mixture cool to room temperature, about 10 minutes. Then whisk in kefir until smooth.
- Divide mixture among 4 ramekins or glasses. Refrigerate until set, at least 4 hours or overnight.
- To serve, run a knife around edges and invert onto plates, or serve in glasses.

- For a lighter texture, use low-fat kefir, but full-fat yields creamier results.
- Top with fresh berries or a fruit coulis for added flavor.
