Kake soba is a simple Japanese noodle soup featuring buckwheat soba noodles in a warm, savory broth made from dashi, soy sauce, and mirin. This quick and comforting recipe is perfect for a light meal.
Bring a large pot of water to a boil. Cook soba noodles according to package directions until tender. Drain and rinse under cold water to remove excess starch. Drain well and divide between two bowls.
In a medium saucepan, combine dashi stock, soy sauce, mirin, and sugar. Bring to a boil over medium heat, then reduce heat to low and simmer for 2 minutes.
Pour the hot broth over the noodles in each bowl.
Top with sliced green onions and torn nori. Serve immediately with shichimi togarashi on the side if desired.
Tips
For a more flavorful broth, use homemade dashi made from kombu and bonito flakes.
Add a soft-boiled egg or tempura for a heartier meal.
Leftover broth can be stored in the refrigerator for up to 3 days.
