Ingredients
- 1 9-inch unbaked pie crust
- 2 cups kabocha squash, peeled, seeded, and cubed

- 1/2 cup heavy cream
- 2 large eggs

- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg

Instructions
- Preheat oven to 375°F (190°C). Place the pie crust in a 9-inch pie dish and crimp edges. Chill until needed.
- Place kabocha cubes in a steamer basket over boiling water. Cover and steam until very tender, about 15 minutes. Drain and mash until smooth.
- In a large bowl, whisk together mashed kabocha, brown sugar, heavy cream, eggs, vanilla, cinnamon, ginger, nutmeg, and salt until smooth.
- Pour filling into prepared crust. Bake for 45-55 minutes, until filling is set and a knife inserted near center comes out clean. Cool on a wire rack.
- Serve warm or at room temperature. Refrigerate leftovers.
