Ingredients
2 cups all-purpose flour
4 large eggs
1/2 cup water
1 teaspoon salt
1/4 teaspoon freshly grated nutmeg
2 cups shredded Emmental or Gruyère cheese
1/2 cup shredded sharp cheddar
1 large onion, thinly sliced
2 tablespoons butter
2 tablespoons vegetable oil
Fresh chives for garnish (optional)
Instructions
In a large bowl, whisk together flour, eggs, water, salt, and nutmeg until a smooth, thick batter forms. Let rest for 10 minutes.
Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander with large holes, press the batter through into the boiling water. Cook for 2-3 minutes until the noodles float. Drain and rinse with cold water. Set aside.
In a large skillet, heat oil and butter over medium heat. Add sliced onions and cook, stirring occasionally, until golden brown and crispy, about 10 minutes. Remove onions with a slotted spoon and set aside.
In the same skillet, melt 1 tablespoon butter over medium heat. Add half the cooked spaetzle, then sprinkle with half the cheese. Repeat layers with remaining spaetzle and cheese. Cover and cook until cheese melts, about 5 minutes.
Top with crispy onions and garnish with chives if desired. Serve immediately.
Tips
For extra flavor, use a mix of Emmental and Gruyère cheese.
If you don't have a spaetzle maker, use a colander with large holes or a piping bag.
Leftover Käsespätzle can be reheated in a skillet with a little butter.
