Jordan almonds are a classic Italian confection featuring crunchy almonds coated in a hard, glossy candy shell. This homemade version is perfect for weddings, favors, or a sweet treat.

Ingredients
2 cups raw almonds, with skins
1 cup granulated sugar
1/2 cup water
1/2 teaspoon almond extract
Food coloring (optional, for tinted shells)
Instructions
Line a baking sheet with parchment paper or a silicone mat.
In a medium saucepan, combine sugar and water. Cook over medium heat, stirring constantly, until sugar dissolves and mixture comes to a boil.
Add almonds and stir to coat. Continue cooking, stirring frequently, until the syrup thickens and becomes grainy, about 5-7 minutes. The almonds will be coated in a white, sandy-looking sugar.
Reduce heat to low and add almond extract. Stir constantly for another 2-3 minutes, until the sugar coating hardens and the almonds separate.
If using food coloring, add a few drops and stir until evenly distributed. Continue stirring for 1-2 minutes to set the color.
Spread almonds onto prepared baking sheet in a single layer. Let cool completely at room temperature.
Once cool, break apart any clusters. Store in an airtight container.
Tips
Work quickly after adding extract to prevent the coating from becoming too hard to stir.
For a smoother finish, you can polish the almonds by placing them in a sieve and shaking off excess sugar dust.
