Ingredients
1 cup long-grain white rice
8 cups water or chicken broth
1 teaspoon salt
1 tablespoon ginger, thinly sliced
2 green onions, sliced (for garnish)
1 teaspoon sesame oil (optional, for drizzling)
Instructions
Rinse the rice in a fine-mesh strainer under cold water until the water runs clear.
In a large pot, combine the rinsed rice, water or broth, salt, and ginger. Bring to a boil over high heat.
Reduce heat to low, cover partially, and simmer for 1.5 hours, stirring occasionally to prevent sticking. The jook should be thick and creamy.
Remove the ginger slices. Ladle into bowls and garnish with sliced green onions and a drizzle of sesame oil if desired.

For a richer flavor, use chicken broth instead of water.
