Jok is a comforting Thai rice porridge, often enjoyed for breakfast or as a soothing meal. This recipe creates a creamy, savory porridge with ground pork and a perfectly soft-centered egg.

Ingredients
1 cup jasmine rice, rinsed
6 cups chicken or vegetable broth
1/2 lb ground pork
1 tablespoon soy sauce
1 teaspoon fish sauce
1/2 teaspoon white pepper
1 tablespoon ginger, julienned
2 green onions, sliced
2 eggs
Cilantro leaves for garnish
Fried garlic (optional)
Chili oil (optional)
Instructions
In a large pot, combine rinsed rice and broth. Bring to a boil over high heat, then reduce to low and simmer, stirring occasionally, for 20 minutes or until rice is very soft and porridge-like.
While porridge cooks, mix ground pork with soy sauce, fish sauce, and white pepper. Set aside.
Once rice is tender, stir in the seasoned pork and ginger. Cook for 3-4 minutes, breaking pork into small pieces, until pork is cooked through.
Crack eggs into the porridge, one at a time, without stirring. Cover and cook for 2-3 minutes for soft-centered yolks, or longer if desired.
Ladle into bowls. Top with green onions, cilantro, fried garlic, and chili oil if using. Serve hot.
Tips
For a vegetarian version, omit pork and use vegetable broth, adding tofu or mushrooms.
Adjust consistency by adding more broth if too thick, or simmer longer if too thin.
Store leftovers in the fridge for up to 3 days; add a splash of water when reheating.
