1 cup yellow cornmeal

1 tablespoon sugar
1 cup boiling water
1/4 cup milk
2 tablespoons butter, melted
1/2 cup all-purpose flour
1 teaspoon baking powder
1 large egg

Instructions
In a large bowl, combine cornmeal, salt, and sugar. Pour in boiling water and stir until smooth. Let cool for 5 minutes.
Stir in milk, melted butter, flour, and baking powder until just combined. Beat in the egg until smooth.
Heat a thin layer of vegetable oil in a large skillet over medium heat.
