2 tablespoons light corn syrup
1 tablespoon unflavored gelatin (about 1 packet)
1/2 teaspoon citric acid (optional, for tartness)
1/4 teaspoon fruit extract (optional, for stronger flavor)
Food coloring (optional)
1/4 cup cornstarch, for dusting
Instructions
In a small bowl, sprinkle gelatin over 2 tablespoons of the fruit juice. Let stand for 5 minutes to bloom.
In a small saucepan, combine remaining juice, sugar, and corn syrup. Heat over medium heat, stirring, until sugar dissolves and mixture comes to a simmer.
Remove from heat and stir in bloomed gelatin until completely dissolved. Add citric acid, fruit extract, and food coloring if using. Stir well.
Pour mixture into a small square or rectangular dish (about 4x4 inches) lined with plastic wrap. Refrigerate until firm, at least 2 hours.
Once set, invert onto a cutting board dusted with cornstarch. Cut into small bean shapes using a sharp knife or small cookie cutters.
Toss jelly beans in cornstarch to coat, then place on a wire rack to dry at room temperature for 24 hours for a chewier texture.
