Ingredients
1 package (6 oz) strawberry Jell-O
1 cup boiling water
1 can (20 oz) crushed pineapple, undrained
1 can (15 oz) fruit cocktail, drained
1 cup cold water
1 package (8 oz) cream cheese, softened
1/2 cup mayonnaise
1/2 cup heavy cream, whipped
1/2 cup chopped pecans (optional)
Instructions
In a large bowl, dissolve Jell-O in boiling water. Stir in undrained crushed pineapple, drained fruit cocktail, and cold water. Pour into a 9x13-inch dish and refrigerate until set, about 4 hours.
In a separate bowl, beat cream cheese and mayonnaise until smooth. Fold in whipped cream and pecans if using.
Spread the creamy mixture over the set Jell-O. Refrigerate for at least 1 hour before serving.
Tips
For a lighter version, use low-fat cream cheese and light mayonnaise.
Can be made a day ahead; cover and refrigerate.
Garnish with maraschino cherries or fresh mint if desired.
