Ingredients
4 large baking potatoes (about 300g each)
1 tablespoon olive oil
1 teaspoon sea salt
Butter, for serving
Grated cheddar cheese, for serving
Baked beans, for serving
Instructions
Preheat the oven to 200°C (400°F).
Scrub the potatoes clean and pat dry. Prick each potato several times with a fork.
Rub the potatoes with olive oil and sprinkle with sea salt.
Place the potatoes directly on the oven rack and bake for 60 minutes, or until the skin is crisp and the inside is tender when pierced with a knife.
Remove from the oven and let cool for 5 minutes. Cut a cross in the top of each potato and squeeze the sides to open.
Serve immediately with butter, cheese, and baked beans.
Tips
For extra crispy skin, brush the potatoes with oil and salt again halfway through baking.
Leftover baked potatoes can be refrigerated and reheated in the oven or microwave.
