Ingredients
4 large russet potatoes (about 10 oz each)
2 tbsp olive oil
1 tsp kosher salt
1/2 cup sour cream
1/2 cup shredded cheddar cheese
4 tbsp unsalted butter
4 slices cooked bacon, crumbled
2 green onions, sliced
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C). Scrub potatoes clean and pat dry. Prick each potato several times with a fork.
Rub potatoes with olive oil and sprinkle with kosher salt. Place directly on oven rack and bake for 60-75 minutes, until skin is crisp and a knife inserts easily.
Remove from oven and let cool for 5 minutes. Slice each potato open lengthwise and fluff the flesh with a fork.
Top each potato with 1 tbsp butter, 2 tbsp sour cream, 2 tbsp cheddar cheese, crumbled bacon, and green onions. Season with salt and pepper to taste.
Serve immediately while hot.

For extra crispy skin, rub potatoes with oil and salt, then bake directly on the rack.
