Ingredients
4 large baking potatoes (about 300g each)
1 tbsp olive oil
1 tsp sea salt
200g grated cheddar cheese
1 can (400g) baked beans
200g canned tuna, drained
4 tbsp sour cream
4 tbsp butter
Salt and pepper to taste
Instructions
Preheat oven to 200°C (400°F). Scrub potatoes clean and pat dry. Prick each potato several times with a fork.
Rub potatoes with olive oil and sprinkle with sea salt. Place directly on oven rack and bake for 1 hour to 1 hour 15 minutes, until skin is crisp and flesh is soft when squeezed.
While potatoes bake, prepare fillings: Grate cheese, warm baked beans in a small saucepan, and flake tuna with a fork. Set aside.
Remove potatoes from oven. Let cool for 5 minutes. Cut a cross on top of each potato and squeeze open from the bottom to fluff the flesh.
Add 1 tablespoon butter and 1 tablespoon sour cream to each potato, season with salt and pepper, and mash lightly with a fork.
Top with desired fillings: grated cheese, baked beans, tuna, or a combination. Serve immediately.
Tips
For extra crispy skin, bake potatoes directly on the oven rack, not on a tray.
Leftover baked potatoes can be refrigerated and reheated in the oven or microwave.
