  2. Rub potatoes with olive oil and sprinkle with sea salt. Place directly on oven rack and bake for 1 hour to 1 hour 15 minutes, until skin is crisp and flesh is soft when squeezed.
  3. While potatoes bake, prepare fillings: Grate cheese, warm baked beans in a small saucepan, and flake tuna with a fork. Set aside.
  4. Remove potatoes from oven. Let cool for 5 minutes. Cut a cross on top of each potato and squeeze open from the bottom to fluff the flesh.
  5. Add 1 tablespoon butter and 1 tablespoon sour cream to each potato, season with salt and pepper, and mash lightly with a fork.
  6. Top with desired fillings: grated cheese, baked beans, tuna, or a combination. Serve immediately.
