Ingredients
- 1 loaf (about 24 inches) Italian bread or 4 individual sub rolls
- 1/2 cup mayonnaise
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 pound sliced Genoa salami
- 1/2 pound sliced capicola (ham)
- 1/2 pound sliced provolone cheese
- 1 cup shredded iceberg lettuce
- 1 medium tomato, sliced
- 1/2 medium red onion, thinly sliced
- 1/4 cup sliced pepperoncini peppers
- 1/4 cup sliced black olives
Instructions
- Slice the bread horizontally, but not all the way through, to create a hinge. If using individual rolls, split them open.
- In a small bowl, whisk together mayonnaise, red wine vinegar, oregano, salt, and pepper until smooth.
- Spread the dressing evenly on both cut sides of the bread.
- Layer the salami, capicola, and provolone on the bottom half of the bread, folding the meats and cheese to fit.
- Top with lettuce, tomato slices, red onion, pepperoncini, and black olives.
- Close the sandwich, press down gently, and slice into 4 portions if using a whole loaf. Serve immediately.
Tips
- For best flavor, let the assembled sandwich rest for 10 minutes before slicing to allow flavors to meld.
- Wrap leftover sandwich tightly in plastic wrap and refrigerate for up to 1 day.
- Add hot peppers or banana peppers for extra heat.
