Ingredients
1 lb boneless skinless chicken breasts (about 2)
2 tbsp olive oil
1 tsp garlic powder
1 tsp dried oregano
1 tsp dried basil
1/2 tsp salt
1/4 tsp black pepper
4 hoagie rolls, split and lightly toasted
4 slices provolone cheese
1/2 cup giardiniera (pickled Italian vegetables), drained
1/2 cup shredded lettuce
1/4 cup mayonnaise
1 tbsp red wine vinegar
Instructions
Pound chicken breasts to even 1/2-inch thickness. In a small bowl, mix garlic powder, oregano, basil, salt, and pepper. Rub both sides of chicken with the spice mixture.
Heat olive oil in a large skillet over medium-high heat. Cook chicken for 5-6 minutes per side, until golden and cooked through (internal temp 165°F). Let rest 5 minutes, then slice against the grain.
In a small bowl, combine mayonnaise and red wine vinegar to make a quick dressing.
Spread the dressing on the cut sides of the toasted rolls. Layer with sliced chicken, provolone, giardiniera, and shredded lettuce.
Place sandwiches under a broiler for 1-2 minutes until cheese melts, if desired. Serve immediately.
