Ingredients
2 tablespoons olive oil
1 large onion, chopped
3 cloves garlic, minced
4 large carrots, peeled and sliced
3 celery stalks, sliced
4 medium potatoes, peeled and cubed
2 parsnips, peeled and sliced
1 turnip, peeled and cubed
4 cups vegetable broth
1 cup water
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
Salt and black pepper to taste
2 tablespoons chopped fresh parsley for garnish
Instructions
Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened, about 3 minutes.
Add carrots, celery, potatoes, parsnips, and turnip. Cook for 5 minutes, stirring occasionally.
Stir in tomato paste, thyme, rosemary, and bay leaves. Cook for 1 minute.
Pour in vegetable broth and water. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until vegetables are tender.
Season with salt and pepper to taste. Remove bay leaves.
Ladle into bowls and garnish with fresh parsley. Serve hot.
Tips
For a thicker stew, mash some of the potatoes against the side of the pot before serving.
Add a splash of Irish stout or ale for extra depth of flavor.
Store leftovers in the refrigerator for up to 4 days. Reheat gently on the stovetop.
