Ingredients
- 1 lb lamb shoulder, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups water
- 4 medium potatoes, peeled and diced
- 2 carrots, diced
- 2 stalks celery, diced
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley for garnish
Instructions
- Heat oil in a large pot over medium-high heat. Brown lamb cubes in batches, about 3-4 minutes per batch. Remove and set aside.
- Reduce heat to medium. Add onion and garlic, cook until softened, about 3 minutes.
- Return lamb to pot. Add broth, water, potatoes, carrots, celery, thyme, and bay leaf. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1 hour or until lamb is tender.
- Remove bay leaf. Season with salt and pepper. Serve hot, garnished with parsley.

- For a thicker soup, mash some of the potatoes against the side of the pot before serving.
