Ingredients
2 cups rolled oats
1 cup sliced almonds
1/2 cup honey
1/2 cup unsalted butter
1/2 cup packed brown sugar
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup dried cranberries or raisins
1/2 cup semisweet chocolate chips (optional)
Instructions
Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving overhang on two sides.
Spread oats and almonds on a baking sheet; toast in oven for 10 minutes, stirring halfway, until lightly golden. Remove and let cool slightly.
In a small saucepan over medium heat, combine honey, butter, brown sugar, vanilla, and salt. Cook, stirring, until butter melts and sugar dissolves, about 3 minutes. Do not boil.
In a large bowl, mix toasted oats and almonds with dried cranberries and chocolate chips (if using). Pour honey mixture over dry ingredients and stir until well coated.
Transfer mixture to prepared pan. Press firmly and evenly into the pan using a spatula or the bottom of a glass. Mixture should be compact.
Bake for 15-18 minutes, until edges are golden brown. Cool completely in pan on a wire rack (about 1 hour).
Using parchment overhang, lift bars out of pan. Place on cutting board and cut into 12 bars with a sharp knife.
Tips
For extra crunch, substitute 1/2 cup of the oats with crispy rice cereal.
Store bars in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months.
If bars crumble, press mixture more firmly or add a tablespoon more honey.
