Ingredients
- 2 cups ripe papaya, grated (about 1 medium papaya)
- 1/2 cup ghee
- 1/2 cup sugar (adjust to taste)
- 1/2 cup milk
- 1/4 teaspoon cardamom powder
- 2 tablespoons chopped nuts (almonds, cashews, pistachios)
- 1 tablespoon raisins
Instructions
- Heat ghee in a heavy-bottomed pan over medium heat. Add the grated papaya and sauté for 5-7 minutes until it softens and releases moisture.
- Add milk and cook, stirring frequently, until the mixture thickens and the milk is absorbed (about 10 minutes).
- Add sugar and continue cooking, stirring constantly, until the halwa comes together and leaves the sides of the pan (about 5-8 minutes).
- Stir in cardamom powder, nuts, and raisins. Cook for another minute.
- Remove from heat and spread the halwa in a greased dish. Let it cool slightly, then cut into squares or serve warm.
Tips
- Use ripe but firm papaya for best texture; overripe papaya may become mushy.
- Store in an airtight container in the refrigerator for up to a week.
- Garnish with extra chopped nuts and edible silver leaf (varak) for a festive touch.
