Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Beat in eggs one at a time, then stir in 1 teaspoon vanilla extract.
In a separate bowl, whisk together flour, baking soda, cinnamon, and salt. Gradually add to butter mixture and mix until combined.
Stir in rolled oats until evenly distributed.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
Bake for 10-12 minutes, until edges are golden but centers are still soft. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
For icing: whisk together powdered sugar, milk, and 1/2 teaspoon vanilla extract until smooth.
Drizzle icing over cooled cookies. Let set for 15 minutes before serving.
