- In a small saucepan, combine sugar and water. Bring to a boil, stirring until sugar dissolves. Remove from heat and let cool to room temperature.
- In a blender, combine berries and lemon juice. Blend until smooth.
- Strain the berry puree through a fine-mesh sieve into a bowl to remove seeds (optional).
- Stir the cooled simple syrup into the berry puree until well combined.
- Pour the mixture into ice lolly molds, leaving a little space at the top for expansion.
- Insert sticks and freeze for at least 6 hours or until solid.
