Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups vanilla ice cream, softened
Instructions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
Drop dough by rounded tablespoons onto prepared baking sheets, spacing about 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 8-10 minutes, until edges are set. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Once cookies are cool, spread about 3 tablespoons of softened ice cream onto the flat side of one cookie. Top with another cookie, flat side down, and gently press together.
Place sandwiches on a baking sheet and freeze for at least 2 hours until firm. Wrap individually in plastic wrap for storage.
Tips
For best results, use cookies that are slightly underbaked so they remain soft after freezing.
Let ice cream soften at room temperature for 10-15 minutes before assembling.
Store wrapped sandwiches in the freezer for up to 2 weeks.
