Ingredients
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups vanilla ice cream, softened
Instructions
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in egg and vanilla extract.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt. Gradually add to the butter mixture, mixing until just combined.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 8-10 minutes, until edges are set and tops are slightly cracked. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
Once cookies are cool, spread about 2 tablespoons of softened ice cream onto the flat side of one cookie. Top with another cookie, flat side down, and gently press together. Repeat with remaining cookies.
Wrap each sandwich tightly in plastic wrap and freeze for at least 2 hours before serving.
