Ingredients
2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1 tablespoon vanilla extract
1/4 teaspoon salt
1 cup semi-sweet chocolate chips
1 tablespoon coconut oil
1/2 cup assorted toppings (sprinkles, crushed nuts, etc.)
Instructions
In a large bowl, whisk together heavy cream, milk, sugar, vanilla extract, and salt until sugar is dissolved.
Pour the mixture into popsicle molds, leaving a little room at the top for expansion. Insert sticks and freeze for at least 6 hours or until solid.
Once frozen, prepare the chocolate coating: In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring each time, until smooth.
Remove popsicles from molds. Dip each popsicle into the melted chocolate, letting excess drip off.
Immediately sprinkle with desired toppings before the chocolate sets. Place on a parchment-lined baking sheet and freeze for 10 minutes to harden.
Store in an airtight container in the freezer for up to 2 weeks.
Tips
To easily remove popsicles from molds, run warm water over the outside of the mold for a few seconds.
Use high-quality chocolate for the best flavor.
Get creative with toppings like crushed cookies, shredded coconut, or mini chocolate chips.
