Ingredients
1 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon sugar
1/4 cup finely chopped onion
1 large egg, lightly beaten
3/4 cup buttermilk
Vegetable oil for frying
Instructions
In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar. Stir in chopped onion.
In a small bowl, combine egg and buttermilk. Pour into dry ingredients and stir just until moistened. Batter will be thick.
In a deep pot or Dutch oven, heat about 2 inches of oil to 365°F (185°C).
Drop batter by rounded tablespoonfuls into hot oil, frying in batches without crowding. Fry for 2-3 minutes, turning once, until golden brown and cooked through.
Drain on paper towels. Serve warm.
Tips
For extra flavor, add 1/4 cup corn kernels or a pinch of cayenne pepper to the batter.
Keep hush puppies warm in a 200°F oven while frying remaining batches.
Serve with tartar sauce, remoulade, or honey butter.
