Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup tahini
- 3 tablespoons lemon juice
- 2 tablespoons olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin
- 2-3 tablespoons ice water
- Paprika and olive oil for garnish
Instructions
- In a food processor, combine tahini and lemon juice. Process for 1 minute until thick and pale.
- Add olive oil, garlic, salt, and cumin. Process for 30 seconds.
- Add chickpeas and process for 1 minute until smooth. Scrape down sides.
- With processor running, add ice water 1 tablespoon at a time until desired consistency is reached.
- Taste and adjust seasoning. Transfer to a bowl, drizzle with olive oil, and sprinkle paprika.
Tips
- For extra smooth hummus, peel the chickpeas by rubbing them in a towel.
- Store in an airtight container in the refrigerator for up to 1 week.
- Serve with warm pita bread or fresh vegetables.
