Ingredients
2 cups human milk
1/2 cup heavy cream
1/2 cup granulated sugar
4 large egg yolks
1 teaspoon vanilla extract
Pinch of salt
Instructions
In a medium saucepan, combine human milk, heavy cream, and salt. Heat over medium heat until just simmering, stirring occasionally.
In a separate bowl, whisk together egg yolks and sugar until thick and pale.
Slowly pour about 1/2 cup of the hot milk mixture into the egg yolk mixture, whisking constantly to temper the eggs.
Pour the egg mixture back into the saucepan with the remaining milk mixture, stirring constantly.
Cook over medium-low heat, stirring constantly with a wooden spoon, until the mixture thickens and coats the back of the spoon (about 5-7 minutes). Do not let it boil.
Remove from heat and stir in vanilla extract.
Strain the custard through a fine-mesh sieve into a bowl. Let cool to room temperature, then cover and refrigerate until thoroughly chilled (at least 4 hours or overnight).
Churn the chilled custard in an ice cream maker according to the manufacturer's instructions.
Transfer to an airtight container and freeze for at least 2 hours before serving.
Tips
For best texture, use fresh human milk and consume within a few days.
Serve with fresh berries or a drizzle of honey.
If you don't have an ice cream maker, pour the custard into a shallow dish and freeze, stirring every 30 minutes until creamy.
