  2. In a small bowl, whisk together soy sauce, oyster sauce, dark soy sauce, sugar, chicken broth, and sesame oil. Set aside.
  3. Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add chicken and beef, stir-fry until just cooked through, about 2-3 minutes. Remove to a plate.
  4. Add remaining 1 tbsp oil to the wok. Add shrimp and stir-fry until pink, about 1-2 minutes. Remove to the plate with meat.
  5. Add mushrooms, snow peas, carrots, and bean sprouts to the wok. Stir-fry for 2 minutes until crisp-tender. Add garlic and ginger, cook for 30 seconds.
  6. Return cooked meats and shrimp to the wok. Add the cooked noodles and the sauce mixture. Toss everything together over high heat until well combined and heated through.
  7. Pour in the cornstarch slurry and stir-fry for another minute until the sauce thickens and coats the noodles. Add green onions, toss briefly, and serve immediately.
