Ingredients
1 lb chicken tenders
1/2 cup all-purpose flour
1/2 cup panko breadcrumbs
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 large egg
2 tablespoons milk
1/4 cup honey
2 tablespoons Dijon mustard
1 tablespoon whole-grain mustard
1 tablespoon olive oil
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow dish, combine flour, panko, garlic powder, paprika, salt, and pepper.
In another shallow dish, whisk together egg and milk.
Dip each chicken tender first into the flour mixture, then into the egg mixture, and back into the flour mixture, pressing to adhere. Place on prepared baking sheet.
Bake for 10 minutes, then flip and bake for another 5-7 minutes until golden and cooked through (internal temperature 165°F).
While chicken bakes, whisk together honey, Dijon mustard, whole-grain mustard, and olive oil in a small bowl.
Remove chicken from oven and brush generously with honey mustard glaze. Serve immediately.
Tips
For extra crispiness, spray the chicken tenders with cooking spray before baking.
Leftover glaze can be used as a dipping sauce.
