Ingredients
1 (8-10 lb) fully cooked bone-in ham
1/2 cup honey
1/2 cup packed brown sugar
1/4 cup Dijon mustard
2 tablespoons apple cider vinegar
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
Instructions
Preheat oven to 325°F. Place ham cut-side down on a rack in a roasting pan. Score the surface in a diamond pattern, about 1/4 inch deep.
In a small bowl, whisk together honey, brown sugar, Dijon mustard, apple cider vinegar, cloves, and cinnamon until smooth.
Brush about half the glaze over the ham, reserving the rest for basting.
Bake ham for 1 hour 30 minutes, basting every 20-30 minutes with the remaining glaze and pan juices.
Increase oven temperature to 400°F. Continue baking for 15-20 minutes, basting once more, until glaze is caramelized and ham is heated through (internal temperature 140°F).
Remove from oven, tent with foil, and let rest 15 minutes before slicing.
Tips
For extra caramelization, broil the ham for 2-3 minutes at the end, watching carefully.
Leftover ham can be stored in the refrigerator for up to 5 days or frozen for 2 months.
Serve with the pan juices as a sauce, or thicken with a cornstarch slurry.
