Ingredients
1 lb baby carrots, peeled
2 tbsp unsalted butter
2 tbsp honey
1/4 tsp salt
1/8 tsp black pepper
1 tbsp fresh parsley, chopped (optional)
Instructions
Preheat oven to 400°F (200°C).
In a large bowl, toss baby carrots with melted butter, honey, salt, and pepper until evenly coated.
Spread carrots in a single layer on a baking sheet lined with parchment paper.
Roast for 20-25 minutes, stirring halfway through, until carrots are tender and glaze is caramelized.
